Stuffed Roast Recipe: Guaranteed Crowd Pleaser

Ingredients:

  • 1 whole beef roast (about 4–5 pounds)
    - 2 cups of bread crumbs
    - 1 cup of finely chopped mushrooms
    - 1/2 cup of finely chopped onions
    - 2 cloves of garlic, minced
    - 1/2 cup of chopped fresh parsley
    - 1/4 cup of grated Parmesan cheese
    - 2 eggs, beaten
    - Salt and pepper to taste
    - 2 tablespoons of olive oil
    - 1/2 cup of red wine
    - 2 cups of beef broth

Cooking Materials:

Large roasting pan
Skillet
Mixing bowl
Kitchen twine
Meat thermometer

Instructions:

1. Prepare the Stuffing:
In a skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent. Add mushrooms and cook until tender. Transfer to a mixing bowl and let it cool. Stir in bread crumbs, parsley, Parmesan, beaten eggs, salt, and pepper.

2. Prepare the Roast:
Preheat your oven to 375°F (190°C). Lay the roast flat on your workspace. Spread the stuffing evenly over the roast, leaving a small border around the edges. Carefully roll up the roast and tie it securely with kitchen twine.

3. Cook the Roast:
In the roasting pan, place the tied roast and pour beef broth and red wine around it. Season the outside of the roast with salt and pepper. Insert the meat thermometer into the thickest part of the roast.

4. Roasting Time:
Roast in the preheated oven for about 1.5 to 2 hours, or until the meat thermometer reads 145°F (63°C) for medium-rare. Baste the roast occasionally with the pan juices.

5. Rest and Serve:
Once cooked, remove the roast from the oven and let it rest for 10–15 minutes before slicing. This allows the juices to be redistributed, ensuring the meat is succulent and flavorful.
